Steps:
- Preheat oven to 425. In large bowl toss root vegetables with oil, honey & thyme & season with salt & pepper. Divide between 2 large rimmed baking sheets. Cover with foil. Roast 40 min, shifting pans once, until tender. Remove foil & roas 10 min. longer, until glased. Return to bowl. Stir in vinegar & season with salt/pepper. Serve immediately. Can be cooked early in day, left at room temp and rewarmed.
