HONEY GLAZED ROASTED ROOT VEGETABLES image

Number Of Ingredients 8

1 1/4 lbs parsnips, peeled & sliced 1/2 in. thick
1 1/4 lbs carrots, peeled & sliced 1/2 in. thick
One 1 1/4 lb. celery root peeled, quartered & sliced 1/2 in. thick
1/2 c. extra virgin olive oil
1/2 c. honey
6 thyme sprigs
Salt & Pepper
2 tbl. Sherry Vinegar

Steps:

  • Preheat oven to 425. In large bowl toss root vegetables with oil, honey & thyme & season with salt & pepper. Divide between 2 large rimmed baking sheets. Cover with foil. Roast 40 min, shifting pans once, until tender. Remove foil & roas 10 min. longer, until glased. Return to bowl. Stir in vinegar & season with salt/pepper. Serve immediately. Can be cooked early in day, left at room temp and rewarmed.
