HONEY BALSAMIC ROASTED CARROTS image

1 Lb. carrots, cut in half crosswise, each half cut into quarters lengthwise
2 Tbsp EVOO
1 Tbsp honey
2 tsp aged balsamic vinegar, plus more for finishing
1/2 tsp coarse sea salt, plus more for finishing
Black pepper

Steps:

  • Heat oven to 375. Put carrots in a roasting pan. In a small bowl, whisk together the olive oil, honey and vinegar. Pour over carrots. Season with salt and pepper.Toss gently to combine. Roast for 10 minutes, toss and raost for 15 minutes more or unti carrots are tender and browned in spots. Sprinkle with vinegar and salt before serving.
