HONEY & APRICOT MUFFINS image

Yield 10 muffins

Number Of Ingredients 9

140g Dried Apricot
300g Plain Flour, sifted
2 level teaspoon Baking Powder
80g Castor Sugar
120g Honey
50g Butter, melted
125g Full Cream Milk
50g Orange Juice
1 no. Egg, lightly beaten

Steps:

  • 1. Preheat oven to 190 Deg. Celsius. Line muffin tin with patty cases. 2. In a small saucepan, simmer the apricots with some water for 5 minutes. Remove from heat and cool for 20 minutes before cutting into pieces. Set aside. 3. Weigh out all dry ingredients into a large mixing bowl. Mix well. 4. Add all wet ingredients to dry ingredients and mix till just moistened. Do not overmix. 5. Spoon batter into muffin tins. 6. Bake in preheated oven for 20 - 25 minutes or till skewer comes out clean when inserted into the centre of the muffin.
