Hominy Grill's Tomato Pudding Recipe image

This dish falls squarely into the realm of quintessential Southern cooking. Its combination of tomatoes, sugar, butter, and bread baked in a casserole dish is not your typical pudding, but it is delicious and is one of the Charleston, SC based Hominy Grill's most requested dishes.

Number Of Ingredients 5

One 28-ounce can whole tomatoes
3/4 cup sugar
1/4 cup whole butter
3-4 slices white bread, cut into cubes
Salt and pepper, to taste

Steps:

  • Preheat the oven to 375 degrees.
  • Pour the canned tomatoes into a medium sized mixing bowl and break them up with a large spoon, not necessarily crushing them but making sure they are broken open.
  • Put the sugar on top of the tomatoes and then put the bread on top of them, as well.
  • Melt the butter and then pour it into the mixing bowl. Add the salt and pepper to the mixture.
  • Pour the mixture into a buttered casserole dish.
  • Bake until bubbly and golden brown.
  • Notes and Substitutions: The Hominy Grill typically uses Brioche, a rich, eggy white bread; and a slice of day-old cornbread for their pudding. They advise paying close attention to the order in which you combine the ingredients, as the melted butter being poured on top of the bread before everything is placed into the casserole pan ensures the dish's toasty flavor.
