Hominy and Corn Casserole image

My husband and children love this dish! I take it to church almost every time we have a meal.

Number Of Ingredients 10

3 cans - white hominy, drained
2 cans - shoe-peg corn, drained
1 can - chopped green chilies
1 tablespoon(s) cornstarch
1/2 teaspoon(s) pepper
1/4 teaspoon(s) salt
8 ounce(s) sour cream
4 ounce(s) cheddar cheese, shredded
8 ounce(s) monterey jack cheese, shredded
- paprika

Steps:

  • Rinse hominy and drain, well.
  • Combine hominy and next 6 ingredients.
  • Spoon half of hominy mixture into a lightly greased 11 X 7 inch baking dish.
  • Combine shredded cheese and sprinkle half of it on the hominy mixture.
  • Spoon the remianing hominy mixture over cheese.
  • Bake, covered, at 350 degrees for 35 minutes.
  • Uncover and sprinkle with the remaining cheese and paprika and bake uncovered for 5 minutes.
