There are just some dishes that once you have tasted the first bite, take you back to childhood in a snap. My Grandfather would use a combination of breakfast sausage and ground beef while my mom always used a full pound of ground beef. Either way, this is a wonderful dish. It would surprise me to hear if anyone had any leftover for lunch the next day.

Steps:
- On medium heat cook ground beef and onion until ground beef is browned and onion is translucent. Drain grease and salt and pepper to taste. (Season a little heavier than normal - to season the rice)
- Preheat oven to 350 degrees. In a large mixing bowl combine ground beef mixture, cooked rice, and 1 1/2 cups shredded cheese. Pour mixture in a greased 2 quart casserole dish.
- Top with remaining 1/2 cup shredded cheese. Bake 20 minutes until cheese is melted and casserole is piping hot.
- This is perfect with a side salad, or your favorite steamed green veggie.
