HOMEMADE TOMATO PASTE image

Number Of Ingredients 3

1 lb. of fresh plum tomato or meaty tomato variety. Do not use watery tomatoes as they tend to be very acidic and take longer to reduce.
1 t/l of extra virgin olive oil.
Salt & pepper (optional.)

Steps:

  • Boil and skin the tomatoes and reserve in a large mixing bowl. You'll need to slice the tomatoes in manageble pieces so your hand mixer can crush them fully. Place the pureed tomatoes in your crock pot or caserole dish with the lid slightly ajar. Set your temperature on your crockpot to its lowest setting or 140 degrees F. Same if using a caserole dish and placing inside your oven. Note: when using the oven you don't need to place the lid on top as this will inhibit the tomatoes from reducing efficiently. Monitor the tomatoes and stir occasionally to prevent the sauce from sticking. after about 8 hours your sauce should have reduced to form a tomato paste consistency. Obviously times will vary greatly depending on your tomatoes.
