Homemade raspberry cake image

A great time to use up some fresh raspberries, in a homemade cake that's easy to make.

1 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 c unsalted butter, softened
2/3 c sugar
1-1/2 Tbsp sugar, divided
1/2 tsp vanilla
1 large egg
1/2 c buttermilk
1 c raspberries

Steps:

  • 1. Heat oven to 400. Lightly spray a 9" cake pan w/ cooking spray. In bowl, whisk together flour, baking powder and baking soda, ( you can add a pinch of salt too.)
  • 2. In another bowl, beat butter and 2/3 cup sugar until fluffy. Beat in vanilla and egg. Beat in flour mis, alternating w/ buttermilk.
  • 3. Spoon batter into pan. Sprinkle top w/ raspberries and remaining sugar. Bake 25 mins, or until a toothpick inserted in center comes out clean. Great served w/ a dollop of whipped cream.
