Homemade Potato Skins image

This is an easy recipe that can easily be doubled or tripled. We have a big family... and they love this appetizer! Just made a double batch with thick chili, onion, cheese and sour cream....!!! Number Of Ingredients 7

8 russet potatoes
2 Tbsp butter
1 tsp paprika
6 chopped green onions
8 slice bacon, cooked and crumbled
1 c shredded sharp cheddar cheese
1 c sour cream

Steps:

  • 1. Whole baked potatoes (or sliced and oiled baked potatoes, they cook faster). When cool enough to handle cut in half and remove pulp.
  • 2. Melt butter and add paprika. Brush butter mixture into potato skin.
  • 3. Place skins under broiler for a few minutes until browned.
  • 4. Bacon
  • 5. Onions
  • 6. Cheese
  • 7. Sour cream
  • 8. Thick Chili (can also use canned).
