Homemade Peach Ice Cream image

Perfect for a summer day. Get the whole family involved and make a batch for your next special occasion or for no reason at all!

Number Of Ingredients 8

1 c peaches
1.25 c sugar
2 Tbsp cornstarch
1/4 tsp salt
2 c milk
2 large eggs
1 Tbsp vanilla
2 c light cream

Steps:

  • 1. Coarsely chop the peaches in a food processor or blender.
  • 2. Combine the peaches with 1/4 cup of sugar and chill.
  • 3. Combine 1 cup of sugar with the cornstarch and salt.
  • 4. Blend the milk gradually.
  • 5. Microwave on high (100%) for about 8 minutes or until thick, stirring two to three times.
  • 6. Beat the eggs and add, gradually, to the cornstarch mixture, stirring constantly.
  • 7. Microwave, on high (100%), about two minutes or until thick and creamy.
  • 8. Chill.
  • 9. Add the vanilla and cream to the mixture.
  • 10. Stir in the peaches.
  • 11. Place in an ice cream freezer and freeze.
