3 egg yolks
1 1/2 sticks of butter
1 tsp lemon
1/2 tsp salt
cayenne

Steps:

  • Do not use a regular double boiler Use of bowl over steaming water Whisk egg yolks Add room temperature, soft, not melted butter in tbs Add lemon and salt If using blender, use melted butter slightly cooled and low speeds
