HOLIDAY SPICE COOKIES image

Number Of Ingredients 14

2 sticks, 1C. butter(8 oz.)
210 g. sugar(about 1 C.)
1/4 C. molasses
1 egg
240 g. flour(about 2 C.)
10 g. baking soda( ~2 t.)
5 g. cinnamon( ~1 t.)
3 g. cloves( ~3/4 t.)
3 g. fine sea salt( ~1/2 t.)
ICING
454 g. confectioners' sugar( ~3 3/4 C.) use less
1 t. vanilla extract
2 T. heavy cream, more as needed
1 -2 T dark rum or Irish whiskey

Steps:

  • 1. Heat oven to 375ยบ. Line several baking sheets w/parchment paper or liners. 2. Beat 12 T. butter w/sugar, molasses, and egg until fluffy, about 2 min. Slowly beat in flour, baking soda, spices, and salt. 3. Shape dough into walnut-size balls; place 2" apart. Bake until firm, about 10-12 min. Cool on wire racks. 4. Beat remaining 4 T. butter w/confectioners' sugar until smooth. Beat in vanilla and enough cream and whiskey/rum to make a spreadable icing. Yield: 36 cookies
