HERRING SPREAD image

Yield 4 cups

Number Of Ingredients 7

1 pound jar herring fillets
2 green apples, peeled, cored and coarsely chopped
1/2 cup chopped red pepper
2 hard boiled eggs, chopped
1/2 cup low fat mayonnaise
1/2 cup light sour cream
cocktail rye for serving

Steps:

  • Line a 4 cup mold with plastic wrap. Drain herring and onion slices. Place herring, onion slices and apples in food processor with metal blade. Pulse until chopped. Transfer to bowl and stir in bell pepper and hard boiled egg. Stir in mayonnaise and sour cream. Pour into mold. Cover and refrigerate for at least 3 hours (or as long as overnight). Invert onto serving plate. Remove plastic wrap. Serve with bread rounds.
