HERRING, BEETS AND POTATO SALAD image

1 salt herring fillet (smoked)
2 red skinned potatoes (boiled and diced)
3 cooked beets (diced)
1/3 cup finely chopped onion
1 large tart apple, diced
1/2 cup diced pickles
2 hard boiled eggs, chopped
2 cup diced cooked ham or veal
Dressing:
1 table spoon of whole grain mustard
1 teaspoon dry mustard
1 1/2 tablespoons of cider vinegar
1 1/3 cup of sour cream
1 teaspoon prepared red horse-radish, drained
1/2 teaspoon of sugar
Salt and freshly ground pepper
1 hard boiled egg, sliced for garnish
Dill

Steps:

  • - Soak fillet in cold water covered in the fridge (6-8 hrs) - Rinse well, pat dry and cut into 1/2 inch cubes - Place in a large bowl and combine with potatoes, beets, onion, apple, pickles, chopped egg, and meats - In a small bowl whisk the dressing - Combine and serve
