Herring Apple Spread image

I tried this recipe as an appetizer, but like it as sandwich spread too! I wanted a unique appetizer for my parents 60th Wedding Anniversary Party. It was a BIG HIT!! :)Enjoy!

Number Of Ingredients 8

16 ounce(s) pickled herring
1 1/2 cup(s) sour cream
2 tablespoon(s) lemon juice concentrate
1 medium onion, white
1 cup(s) celery stalks
1/2 cup(s) water chestnuts
1 teaspoon(s) black pepper
2 medium apples

Steps:

  • Drain Herring and dice into bite-size pieces. Minced Onion, chopped Celery, Water Chestnuts, and Apples into bite-size pieces. Whip Sour Cream until it stands in soft peaks. Blend Sour Cream with Herring and ingredients. Blend well. Chill before serving. Serve on Lettuce Leaves and/or with crackers, bread.
  • Makes 6 to 8 servings. COOING TIP: I like to use 1 each of Granny Smith Apple and Roma Apple. This adds color and flavor to the appetizer. Sometimes, I substitute Green Onions for the White Onion.
