Steps:
- Thaw the spinach in microwave for 3 minutes at 40 percent power. Squeeze out excess water.
- In food processor, process the spinach, sour cream, mayo, scallions, dill, parsley, garlic, salt, and pepper until smooth and creamy - about 30 seconds.
- Transfer to a serving bowl and add the bell pepper. (Can be covered with plastic wrap and stored in fridge for two days)
