Herbed spinach dip image

Number Of Ingredients 10

10 ounces frozen spinach
1/2 cup sour cream
1/2 cup mayonaise
3 medium scallions, white parts only, sliced thin
1 tablespoon chopped fresh dill
1/2 cup fresh parsley leaves (packed)
1 clove garlic, minced or passed through a press
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 medium red bell pepper, cored, seeded, and diced fine

Steps:

  • Thaw the spinach in microwave for 3 minutes at 40 percent power. Squeeze out excess water.
  • In food processor, process the spinach, sour cream, mayo, scallions, dill, parsley, garlic, salt, and pepper until smooth and creamy - about 30 seconds.
  • Transfer to a serving bowl and add the bell pepper. (Can be covered with plastic wrap and stored in fridge for two days)
