Cheesy Herbed Pull-Aparts with Spinach-Artichoke Dip image

If ever there was a dish to make for a party, it's this all-in-one cheesy biscuit and dip skillet! Toasty herbed biscuits stuffed with gooey mozzarella made to be pulled apart and dunked in an indulgent spinach artichoke dip. Don't be surprised if a line forms as soon as you set this on the table!

1 package (8 oz) cream cheese, softened
1/3 cup mayonnaise
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 jar (6 oz) Progresso™ marinated artichoke hearts, drained and chopped
2 cloves garlic, finely chopped
1/2 teaspoon Italian seasoning
1 cup shredded mozzarella cheese (4 oz)
1/4 cup shredded Parmesan cheese
1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 Count)
4 oz block mozzarella cheese, cut into 16 cubes
2 tablespoons butter, melted
1 teaspoon Italian seasoning
2 tablespoons shredded Parmesan cheese

Steps:

  • Heat oven to 350°F. Spray 12-inch ovenproof skillet with cooking spray.
  • In large bowl, mix Dip ingredients until blended. Set aside.
  • Separate dough into 8 biscuits. Separate each biscuit into 2 rounds. Place 1 cube of cheese on center of each biscuit round. Fold edges up and over cheese, pinch firmly to seal; roll into a ball. Place around edge of skillet with pinched end facing down.
  • In small bowl, mix melted butter and 1 teaspoon Italian seasoning. Brush biscuits with butter mixture. Spoon dip mixture in center of skillet, spreading it to edge of biscuits.
  • Bake 25 minutes. Remove from oven; sprinkle 2 tablespoons Parmesan cheese over biscuits. Bake 3 to 5 minutes longer or until biscuits are golden brown and dip is heated through. Let stand 10 minutes before serving.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 medium red bell pepper, chopped finely
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup packed fresh parsley leaves
1 tablespoon fresh dill or 1 teaspoon dried dill
3 medium scallions, sliced thin
1 garlic clove
1/2 teaspoon salt
1/4 teaspoon Tabasco sauce
1/4 teaspoon pepper

Steps:

  • Mince garlic clove in food processor.
  • Add remaining ingredients and process until well combined, about 1 minute.
  • Transfer to serving bowl and chill for at least 1 hour.

10 ounces frozen chopped spinach
1/2 cup low-fat sour cream
1/2 cup low-fat mayonnaise
2 tablespoons scallions, thinly sliced
1/2 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 tablespoon chipotle chile in adobo
1 tablespoon lime juice
1/2 teaspoon lime zest
1/2 teaspoon brown sugar
1 dash cumin
1 garlic clove, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Thaw spinach in microwave for 3 minutes at 40% power.
  • Squeeze partially thawed spinach to remove water and break into chunks.
  • Put all ingredients in Food processor, and process until smooth.
  • Transfer to medium bowl, and refrigerate until ready to serve.
  • May be covered with plastic wrap and stored up to 2 days.

1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons thin-sliced scallions , white parts only, from 3 medium scallions
1 tablespoon chopped fresh dill leaves
1/2 cup packed flat-leaf parsley leaves
1 small clove garlic , minced or pressed through garlic press (about 1 teaspoon)
1/4 teaspoon hot pepper sauce , such as Tabasco
1/2 teaspoon table salt
1/4 teaspoon ground black pepper
1/2 medium red bell pepper , diced fine (about 1/4 cup)

Steps:

  • # 1. Thaw spinach in microwave for 3 minutes at 40 percent power. (Edges should be thawed but not warm; center should be soft enough to be broken apart into icy chunks.) Squeeze partially frozen spinach of excess water. # 2. In food processor, process spinach, sour cream, mayonnaise, scallions, dill, parsley, garlic, hot pepper sauce, salt, and pepper until smooth and creamy, about 30 seconds. Transfer mixture to medium bowl and stir in bell pepper; serve. (Dip can be covered with plastic wrap and refrigerated up to 2 days.)

  • In food processor, process the spinach, sour cream, mayo, scallions, dill, parsley, garlic, salt, and pepper until smooth and creamy - about 30 seconds.
  • Transfer to a serving bowl and add the bell pepper. (Can be covered with plastic wrap and stored in fridge for two days)
