Hemingway's Chili image

IN 2013 while preserving many of Ernest Hemingway's articles, letters, etc. at his home in Havana,Cuba the JFK library found a recipe including India Relish. I have created a version of this condiment that results in an amazing and extremely flavorful revolution in traditional Chili.

2 1/2 lb lean tri-tip
1 can(s) chicken broth
1 can(s) beef broth
1 can(s) tomato sauce
2 Tbsp vegetable shortening
1/2 tsp red pepper flakes
3 tbl Tbsp hot new mexico chili powder
2 Tbsp mild/ light new mexico chili powder
2 Tbsp ground cumin
4 Tbsp chili powder
1 1/2 Tbsp garlic powder
1 Tbsp onion powder
louisiana hot sauce to taste
heaping tbl of india relish

Steps:

  • 1. rinse meat and lightly brown in small batches until grey in color and add to pot
  • 2. add broth and tomato sauce and 1/3 of the spices and bring to a boil. reduce for two hours
  • 3. add the 1/3 of the spices and simmer on low for 30 minutes.
  • 4. add the remaining spices and simmer for 30 minutes,
  • 5. adjust to taste with small amounts of Louisiana Hot sauce Cumin or salt. Add more broth if needed for tender meat.
  • 6. Top with heaping tablespoon of India Relish
