Healthy Texas Caviar (Vegan) - My Whole Food Life image

Healthy Texas Caviar is the perfect salad to take to any cookout. This one is made healthier than the traditional recipe. Vegan and gluten free!

Number Of Ingredients 12

2 cups black beans
2 cups black eyed peas
1 cup diced red pepper
1 cup diced green pepper
1/2 cup diced red onion
2 green onions chopped
1 cup corn
1 1/4 cup cherry tomatoes (cut in quarters)
1 1/2 T lime juice
1 T olive oil
1 T apple cider vinegar
sea salt to taste

Steps:

  • Put all the ingredients in a bowl and mix well.
  • I think the flavors get better as the salad sits in the fridge overnight.
  • This should last about a week in the fridge. Enjoy!
