Sautéed chicken
Black beans, drained and rinsed
Onions, diced
Mushrooms, sliced
Peppers (green and/or red, diced)
Baby spinach leaves, washed and dried
Monteray Jack cheese (plus cheddar if desired)
Corn Tortilla chips
Salsa and sour cream for serving

Steps:

  • Place tortilla chips on baking sheet. Top with sautéed chicken, black beans, onions, mushrooms, peppers, and spinach. Sprinkle generously with cheese. Bake in oven until cheese is melted, making sure not to burn chips. Serve with salsa and sour cream.
