Healthy Broccoli Salad image

Number Of Ingredients 10

2 heads fresh broccoli (roughly chopped)
2 apples (diced)
1/4 cup sweet onion (finely diced)
1/2 cup low sugar Craisins
1-2 Tablespoons sugar
6 Tablespoons apple cider vinegar
2 Tablespoons Dijon mustard
1 Tablespoon canola oil
1/2 teaspoon fresh ground black pepper
Salt, to taste

Steps:

  • In a large bowl, add broccoli, apples, onion, and Craisins. Gently mix together.
  • In a medium bowl, combine remaining ingredients.
  • Fold dressing into broccoli mixture until broccoli is completely covered.
  • Cover bowl and chill in fridge for at least 2 hours because serving to let the flavors meld together.
  • You could also make this dish the day before.
