Hawaiian Rice image

I found an old Uncle Ben's rice cookbook in a yard sale recently and this recipe just jumped off the page at me so I had to give it a try. It was wonderful and I knew that I wanted to share it with everyone here on JAP.

Number Of Ingredients 12

1 1/2 lb cubed pork loin
3 Tbsp low-sodium soy sauce
1/2 c pineapple juice
1 Tbsp vinegar
3/4 tsp salt or to taste
1/2 tsp pepper
1/4 tsp ground ginger
1 c rice
3/4 c diced green pepper
1 Tbsp cornstarch
1 1/2 Tbsp water
13 1/2 oz canned pineapple tidbits---drained

Steps:

  • 1. Combine pork, soy sauce, pineapple juice, vinegar, salt, pepper, and ginger in saucepan. Cook over low heat for 1 hour or till pork is tender.
  • 2. Meanwhile, cook rice according to package directions.
  • 3. When pork it tender, add green pepper and cook 7 more minutes.
  • 4. Dissolve cornstarch in water and add to pork mixture---stir continually until thickened. Stir in pineapple tidbits and cooked rice. Garnish with peanuts and tomato wedges.
