Number Of Ingredients 11

2 cup(s) flour
1 teaspoon(s) baking soda
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
8 1/2 ounce(s) can crushed pineapple, drained
1 cup(s) mashed banana
1/3 cup(s) orange juice
1/2 cup(s) butter
1 cup(s) sugar
2 - eggs, beaten
2 cup(s) chopped macademia nuts (1 1/2 to 2 cups)

Steps:

  • Preheat oven to 350 degrees. Butter a loaf pan.
  • In a bowl, sift dry ingredients together and set aside. In a separate bowl, combine pineapple, banana and orange juice and set aside.
  • In a large bowl, cream butter and sugar. Add eggs and beat well. Add a small amount of the flour mixture alternately with the fruit mixture, mixing only enough to moisten the flour.
  • Stir in the nuts and pour the batter into the prepared pan. Bake for 1 hour 15 minutes. Note: the bread is much better after a day or two.
