Harvard Beets image

I make Harvard Beets for my girlfriend's kids and have to double or triple this recipe for them. Even people who say they don't like beets seem to enjoy these beets.

Number Of Ingredients 6

2 can(s) beets, diced, sliced or baby whole
2/3 sugar
2 Tbsp cornstarch
1/2 c white vinegar
3/4 tsp kosher salt
1/4 c butter

Steps:

  • 1. Drain beets, reserving 1/2 the liquid. Mix sugar and cornstarch in a saucepan. Blend in reserved liquid, vinegar and salt.
  • 2. Bring to a boil, stirring constantly. Reduce heat and simmer for 2 minutes. Add beets and simmer for 15 minutes longer.
  • 3. Stir in butter just before serving.
