Trying to find creative ways to use up this large ham I got on sale. This was a good choice, I think. I served it with a mixture of sweet and golden Yukon potatoes mashed together, sautéed spinach, steamed sweet corn and beer bread muffins. Mmm, good!

Steps:
- 1. Place heavy skillet over medium high heat and add olive oil When oil is shimmering, add the ham steaks and cook about 15 minutes until lightly browned, turning once.
- 2. While ham is cooking, make the sauce.
- 3. Place heavy saucepan over medium heat and melt the butter. Add the flour, salt and pepper and stir continually with wooden spoon until a light roux is formed. Gradually add the milk, continuing to stir until liquid is smooth and creamy.
- 4. Turn heat down to a simmer and continue cooking sauce until it thickens. Remove from heat and stir in the mustard until well blended.
- 5. Place ham steaks on serving dish, ladle the mustard sauce equally over each slice. Garnish with cilantro and chives.
- 6. Good complimentary sides dishes are roasted vegetables, green salad and hot bread.
