HAM & CHEESE MUFFINS image

Number Of Ingredients 10

2 c whole rye (pumpernickel) flour
3/4 c unbleached flour
1 t salt
1/2 t baking soda
1/2 t onion powder
1 1/2 c grated swiss cheese, divided
1 large egg
1 1/2 c buttermilk
1/2 c unsalted butter, melted
4 oz diced ham or 1/2 # bacon, cooked crisp and crumbled

Steps:

  • preheat oven to 400 grease the wells of a muffin tin, or line with paper liners and spray their insides well. The cheese tends to make them stick a bit. 2. In a large mixing bowl, whisk together the flours, salt, baking soda, baking powder, and onion powder. Add 1 1/4 c swiss cheese, tossing to coat. 3. In a separate bowl, whisk together the egg, buttermilk, and melted butter. Add, all at once to the flour mixture and stir until evenly moistened. Stir in the ham or bacon. 4. Scoop the batter into the prepared pan, and then sprinkle the remaining 1/4 c of cheese over the top. 5. Bake the muffins for 25-30 minutes or until the cheese on top is toasted golden brown and a cake tester inserted into the center comes out clean. 6. Remove from oven and place on a rack to cool for 5 minutes before removing them from the pan.
