Ham and Potato Soup image

This came about because I was feeling lazy and didn't want to go out to the store. I had some ham in the freezer from the holidays and everything else on hand.

Number Of Ingredients 14

5 c water
2 tsp chicken base (better than bouillon)
1/2 c chopped onion
1/2 c diced carrots
2 red potatoes, cubed (no need to peel)
2 c cooked ham, cubed
1 bay leaf
1/2 tsp ground black pepper
2 Tbsp dried parsley flakes
1 tsp mild curry powder
1 pkg (4.1 oz) instant mashed potatoes (idahoan)
1 c milk
2 c cheddar cheese, shredded
salt, to taste

Steps:

  • 1. In a large dutch oven, add water, chicken base. onion, carrots and potatoes. Bring to a boil; reduce to a simmer.
  • 2. Add ham, bay leaf, pepper, parsley and curry powder. Cover and simmer 30 minutes. Remove bay leaf.
  • 3. Add instant potatoes and stir. Cook 5 minutes.
  • 4. Add milk and cheese and continue cooking, stirring often, until heated through. Add salt, if needed.
