Ham and Potato Casserole image

Ham and Potato Casserole is an easy dinner for busy night that uses only 5 ingredients! It's a great way to use up your leftover ham!

Number Of Ingredients 6

4 cups frozen potatoes O'Brien with onions and peppers (you can use regular frozen potatoes if you don't like the onions and peppers)
2 cups cooked ham (cut into bite size cubes)
1 cup shredded cheese (any variety. I love Colby-Monterey Jack blend)
1 10 3/4 oz can cream of chicken soup
1/2 cup sour cream
extra cheese for sprinkling on top (optional)

Steps:

  • Heat oven to 375°F. Spray an 8-inch square casserole dish with non-stick spray.
  • Mix all ingredients together in a large bowl, coating the ham and potatoes evenly.
  • Spread the ham and potatoes into your baking dish.
  • Bake for 45-50 minutes or until hot and melty.
  • Let stand 5 minutes before serving.
