CHEESY HAM AND SWEET POTATO CASSEROLE

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
  • Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

3 cups leftover mashed potatoes
1 cup shredded Cheddar cheese, divided
1 (2.8 ounce) package French fried onions, divided
1 ½ cups diced leftover cooked ham
1 (10 ounce) package frozen peas and carrots, thawed and drained
1 (10.75 ounce) can condensed cream of mushroom soup
¾ teaspoon dry mustard
½ teaspoon granulated garlic
¼ teaspoon fresh ground black pepper
aluminum foil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
  • Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
  • Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.

1 medium onion, peeled and thinly sliced

Steps:

  • 1. Put half of ham, potatoes and onions in Crock Pot. Sprinkle with salt and pepper, then 1 cup of the grated cheese.

1 lb honey-roasted ham, cut in small cubes
1 -2 tablespoon olive oil
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk (for non-dairy use 1 1/2 c. rice dream rice milk)
salt
pepper
chives
dried basil
4 medium potatoes, peeled and sliced paper thin
1/2 cup chopped onion

Steps:

  • Pan fry ham and chopped onion in olive oil until onions are lightly browned.
  • While onions and ham are cooking, peel potatoes and slice paper thin.
  • Butter a medium casserole dish and place sauteed ham and onion inside.
  • Salt and pepper the ham and onions.
  • preheat oven at 325 degrees.
  • Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.
  • Arrange potatoes over ham and pour milk and flour mixture over them over them.
  • Sprinkle potatoes with chives and basil flakes.

2 cups cooked ham, cubed (about 1 lb)
1 (10 3/4 ounce) can cream of potato soup

  • In a med bowl, mix milk and soup until smooth. Set aside.
  • Peel and slice potatoes into 1/4 inches slices.

4 -5 medium red potatoes or 4 -5 medium yellow potatoes, peeled and thinly sliced
1/2 green bell pepper, diced
1/2 medium onion, diced
1 1/2 cups diced cooked ham
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup whole milk
1 tablespoon butter
3/4 cup canned plain breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • Spray 1 1/2 quart casserole dish with non-stick spray or lightly butter.
  • Arrange half of potatoes, green pepper and onion, and ham in dish.
  • Sprinkle with freshly ground black pepper.

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
2 cups cubed cooked ham
2 cups sour cream
1-1/2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup butter, melted
1/3 cup chopped green onions
1/2 teaspoon pepper
TOPPING:
2 cups crushed cornflakes
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the first eight ingredients. Transfer to a greased 13x9-in. baking dish. Combine topping ingredients; sprinkle over top. Bake, uncovered, at 350° for 1 hour or until heated through.

This is one of my favorite casseroles that I've created over the years. It's a delicious, creamy, cheesy ham and potato casserole with a crunchy, buttered cornflake topping. It's a great recipe for making the most of your leftover Easter ham! We love it and I'm confident that you will too.

Number Of Ingredients 12

1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 can(s) milk (whole or 2% measured in a soup can)
1/4 tsp seasoned salt
1/8 tsp ground black pepper
6 medium potatoes, raw idaho, russet, yukon gold etc...
3-4 c chopped smoked ham
1/4 c finely chopped onion (optional)
1 c shredded extra-sharp white cheddar cheese
1 c shredded sharp cheddar cheese (yellow)
2 1/2 c crushed cornflakes
4 Tbsp salted butter, melted

Steps:

  • 1. Prep and assemble all ingredients.
  • 2. Butter, or lightly coat with cooking oil spray, a 9"x13" casserole; set aside.
  • 3. In a large bowl, using a large spoon, mix together both soups.
  • 4. Gradually mix in 1 can of milk.
  • 5. Add seasoned salt and pepper; mix well; set aside.
  • 6. Peel potatoes and slice four of them thin in food processor or on mandoline; immediately add to soup mixture and mix well.
  • 7. Change blade, on food processor, to grater/shredder (or use box grater); shred remaining two potatoes; immediately add to soup mixture and mix well.
  • 8. Add chopped ham and onion (if using) and mix well.
  • 9. Place oven rack in middle position and preheat oven to 350º F.
  • 10. Pour mixture into prepared dish and smooth down.
  • 11. Evenly distribute both cheeses over top; set aside.
  • 12. In a medium bowl, mix together crushed cornflakes and melted butter to coat.
  • 13. Sprinkle cornflakes even over top of cheese layer.
  • 14. Bake at 350º F for 1 1/2 hours, turning dish once after 45 minutes.
  • 15. Remove from oven and let rest for 5 minutes before serving.
  • 16. Cover and refrigerate leftovers.

Another old family recipe, handed down mother to daughter. I assume it is Irish, because it was from that side of the family, and it also makes a LOT! Fortunately, it is excellent reheated (and better the next day, too!) My mother always made this with leftover holiday ham, which makes it even more economical. Can be baked in the oven (very slow!) or cooked on the stovetop (my preferred choice).

1 cup milk
5 pounds white potatoes, peeled and sliced
1 (12 ounce) can lite luncheon meat (such as Spam®), cut into 1/2-inch chunks
½ cup margarine, cut into pieces
2 tablespoons salt, or more to taste

Steps:

  • Grease a heavy pot or Dutch oven.
  • Layer about 1/3 of the potatoes into the bottom of the prepared pot.
  • Spread 1/2 of the luncheon meat on top.
  • Sprinkle with about 1/2 of the margarine and about 1/3 of the salt. Repeat the steps once more, then layer the remaining potatoes and margarine on top. Season with salt.
  • Pour milk over potato mixture and cover.
  • Heat pot over medium-high heat until milk begins to bubble, then reduce heat to medium-low. Simmer until potatoes are tender, about 20 minutes.
