Ground Beef/Eggplant Casserole image

This recipe is great to exchange ground beef with chicken, pork, or lamb. Add some peppers too...makes a great taste

1 large eggplant
1/3 c cooking oil
1 lb ground beef
2 c chopped onion
1 can(s) tomatoes, cut up, 16 ounces
1/3 c rice, uncooked
1.5 tsp garlic salt
1 tsp salt
1/4 tsp pepper

Steps:

  • 1. Peel eggplant and cut in 1\" slices.
  • 2. Lightly brown eggplant slices in hot oil in a large skillet.
  • 3. Remove from skillet.
  • 4. Add ground beef and onion to skillet; cook, stirring frequently, until beef is browned.
  • 5. Add tomatoes, rice, garlic salt, salt and pepper; bring to a boil.
  • 6. Place half of eggplant slices in greased 2-1/2 quart casserole.
  • 7. Top with half of beef mixture.
  • 8. Repeat layers.
  • 9. Cover and bake in 350 oven for 1 hour.
