Steps:
- 1. Peel eggplant and cut in 1\" slices.
- 2. Lightly brown eggplant slices in hot oil in a large skillet.
- 3. Remove from skillet.
- 4. Add ground beef and onion to skillet; cook, stirring frequently, until beef is browned.
- 5. Add tomatoes, rice, garlic salt, salt and pepper; bring to a boil.
- 6. Place half of eggplant slices in greased 2-1/2 quart casserole.
- 7. Top with half of beef mixture.
- 8. Repeat layers.
- 9. Cover and bake in 350 oven for 1 hour.
