When purchasing swordfish steaks for your grill, buy the freshest, it shouldn't smell and the flesh should be pink not brown. For best results eat it the day you buy it. Number Of Ingredients 10

2 swordfish steaks
2 tbsp olive oil
1/2 tsp ground coriander
1/2 tsp fresh thyme leaves
1/2 tsp sea salt
1/4 tsp fresh ground black pepper
1 lime or lemon, cut into wedges
olive oil or a dab of butter
2 tbsp finely chopped cilantro for garnish
lime or lemon zest for garnish

Steps:

  • 1. Make sure your grill is hot... You will want to heat the grill to about medium-high heat.
  • 2. Brush both sides of the swordfish with the olive oil then season with coriander, thyme and salt and pepper.
  • 3. Grill swordfish steaks 3 - 5 minutes per side (depending on thickness).
  • 4. Top each steak with a dab of butter or a drizzle of olive oil, add a lime wedge or two, for squeezing over the fish and top with cilantro and lime or lemon zest for garnish.
