1 lbs boneless skinless chicken breast
1 eggwhite
1/2 chicken broth cube
1.5 Tbsp corn starch
1 red bell pepper cut into small strips.
4 tea spoons curry powder
1 teaspoon chinese five spice
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon ground ginger
1 teaspoon turmeric
1/2 teaspoon salt
6 Tbsp peanut or (not toasted) sesame oil or vegetable oil
8oz bean sprouts
2 Tbsp sherry

Steps:

  • Cut the chicken in small strips (if you freeze it a little bit first it makes the cutting easier) In a bowl, mix: the egg white and the spices and the chicken. Then mix in the corn starch (eye-ball the spices, use any combination you have on hand, but definitely use curry powder as the main spice) Fry the chicken in the hot oil in a wok in two batches. meanwhile, dissolve the chicken broth cube in the sherry (20 secs in microwave) Take the chicken out with a slotted spoon, keep warm. stir fry the bean sprouts and pepper for 2 minutes. Add the chicken and sherry and continue to cook for 2 minutes. Taste for seasoning. Serve with egg pasta.
