GRILLED SHRIMP WITH CILANTRO SAUCE image

Number Of Ingredients 11

Shrimp:
1 lb shrimp, minimum 20-32 count, peeled, deveined & tails removed
smoked paprika
salt & pepper
Cilantro sauce:
1 ¼ Cups (packed) fresh cilantro
½ Cup olive oil
5 tbsps white wine vinegar
3 garlic cloves, peeled
2 tsps ground cumin
1 tbsp chilpote adobe sauce

Steps:

  • Cilantro sauce: Combine all ingredients in a food processor/blender. Blend until almost smooth. Season with salt & pepper. Shrimp: Place shrimp on skewers. Season with paprika, salt & pepper. Grill on med-high heat, approximately 2-3 minutes per side, brushing each side with a light coating of cilantro sauce. Place 3 tbsp cilantro sauce in bottom of serving dish. Remove shrimp from skewers atop cilantro sauce and toss lightly. Serve warm.
