i love macaroni salad and my boyfriend is a big grilling and cooking guy and i try every now and then to cook for him and impress him. well i made this for him and he loved it and hes not a seafood person at all. my 2 year old daughter also loves it as well so its a great dish for everyday as well as a party.. the shrimp could be substituted for any shellfish of your choice if you want to try a new take on it

Number Of Ingredients 6

1 package(s) shrimp, peeled and deveined
2 pound(s) pasta of choice, cooked and drained
2 package(s) cherry tomatoes, cut in half
1 large cucumber
- mayonnaise
pinch(es) salt and pepper

Steps:

  • skewer the peeled and deveined shrimp (either wood or metal skewers) grill till fully cooked
  • cook pasta in salted water 9-10 minutes (or by box directions) drain and rinse in cold water.
  • put pasta and shrimp aside to cool in fridge about 10 minutes
  • cut cucumber into bite size pieces and cut the tomatoes in half and set aside
  • once macaroni and shrimp are cooled cut shrimp into bite size pieces, mix into macaroni along with cucumber and tomatoes..mix in mayonnaise (amount is to your liking) and salt and pepper to taste
  • best made the night before and set in fridge to be cold, if cooked night before wait till day of to cook shrimp and add into the pasta
