GRILLED PORK TENDERLOIN CHIMICHURRI image

Number Of Ingredients 9

1 cup lightly packed flat leaf parsley
coarse salt (kosher or sea)
1/3 cup distilled white vinegar
1/3 cup water
4 cloves garlic, chopped
Black pepper
2/3 cup EVOO
1/4 cup basil leaves
2 12 oz. pork tenderloins

Steps:

  • Place parsley, basil, garlic, 3/4 tsp salt and 1/2 tsp pepper in food processor. Cover and process with on/off turns just until finely chopped. Add vinegar and process until combined. Slowly add oil and water. Taste. Mixture should be highly spiced. Place tenderloins in plastic bag. Add half of the marinade and refrigerate 30 minutes to 2 hours, turning bag occasionally. Save remaining sauce for sauce. Grill pork tenderloins 15-25 minutes or Bake until internal temp reaches 160 degrees. Let rest at least 3 minutes. Cut pork into slices and cover with remaining sauce.
