GRILLED HERBED VEGETABLES image

Number Of Ingredients 10

1 crook neck squash cut into planks
1 zucchini cut into plans
1/4 red onion
1 bell pepper
1/2 sweet potato
kosher salt
ground pepper
2 tbsp o.o.
3 tbsp vinegar
4 tbsp rosemary (sub)

Steps:

  • Pre-heat grill to med-high. Mix vinegar, salt, pepper, rosemary, and o.o. with veggies. Grill veggies about 2 mins per side (maybe more) and put back into the vinaigrette.
