Steps:
- 1. Rub the breasts all over with salt and pepper to taste and grill them skin side down over a medium fire for 10 to 12 minutes. The skin should be quite crisp. 2. While the breasts are grilling combine the mixed herbs, olive oil and lemon juice in a small bowl until well blended. 3. Turn the breasts and grill for an additoinal 5 to 6 minutes. During the last minute of cooking, brush the herb mixture on both sides of the chicken. 4. Remove the chicken from the grill and check for doneness by cutting into the thickest part and taking a peek: There should e no pink color and the flesh should be consistently opaque. Optional: What I often do is grill the chicken without the herbs and then spoon the herb mixture on top at serving time.
