GRILLED CHICKEN AND SHALLOTS WITH BLACKBERRY, THYME SAUCE image

Number Of Ingredients 8

o 3 Boneless, Skinless Chicken Breasts (1/2 breasts)
o 1 Package of fresh Blackberries
o 1 TBSP Fresh Thyme (chopped)
o 2 Shallots (sliced)
o 1 TBSP Butter
o ½ tsp lime juice
o 1 tsp Olive Oil
o Salt, Pepper and Sage to taste

Steps:

  • o Cook chicken on grill or griddle (if not available cook in pan in 1 tsp Olive Oil) and add salt, pepper and sage to chicken o In blender, puree blackberries, lime juice, olive oil and thyme o Add butter and shallots to sauté pan on medium heat o To serve spoon sauce on bottom of plate, place chicken on top of sauce and spoon over shallots  Goes great with thyme mashed potatoes
