GRILLED ASPARAGUS, FONTINA AND LEMON PANINI image

Yield 1 sandwich

Number Of Ingredients 7

3-4 spears asparagus, ends trimmed
olive oil for brushing
salt & pepper
2 5/8" slices good-quality artisan bread (not ciabatta - too many holes)
1/2 c lightly packed shredded fontina
1 T shredded parmigiano-reggiano cheese
1/2 t grated lemon zest

Steps:

  • Toss the asparagus with a bit of olive oil, salt and pepper, grill over medium heat until tender and lightly browned, about 5 minutes. Trim to fit the length of the bread; if the spears are very fat, you can split them lengthwise so the sandwich isn't too bulky. Assemble sandwich layering the two cheeses and asparagus and then sprinkling with the lemon zest. Grill the sandwich 1-2 minutes per side or in panini maker.
