GRIDDLE CAKES W/ MARMALADE AND CLOTTED CREAM image

1/2C flour
1/2C quick cooking oats
2t sugar
1t baking powder
1/2t baking soda
1/4t salt
1C buttermilk
1 egg, lightly beaten
5T unsalted butter, melted and cooled

Steps:

  • Pre-heat oven to 200*F. Heat a well-seasoned griddle over med-low heat. Whisk together flour, oats, sugar baking powder and soda and salt. Whisk in buttermilk egg and 3T butter until combined. Add remaining butter to griddle. Spoon 3T batter onto hot griddle, wait for bubbles and edges are set, then flip. Keep finished cakes warm in oven. Serve w/remaining butter, marmalade and creme fraiche.
