Green Tomato Cake image

This is a spiced green tomato cake and is delicious. Great way to use those tomatoes before the frost gets them.

2 1/4 c sugar
1 c vegetable oil or melted shortning
3 eggs
2 tsp vanilla
3 c flour
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1 c pecans or walnuts
1 can raisins
2 1/2 c diced green tomatoes
coconut (sweetened and shredded)

Steps:

  • 1. Preheat oven to 350F
  • 2. In mixing bowl beat sugar, oil or shortning, eggs, vanilla until smooth and creamy.
  • 3. Sift together flour, salt, baking powder, cinnamon and nutmeg. Blend well.
  • 4. Stir in pecans or walnuts, raisins, and tomatoes.
  • 5. Pour in a 9X13 inch pan. Top with coconut if desired. Bake for one hour or until toothpick comes out clean.
  • 6. Frost when cool with your favorite frosting or serve with whipped cream or Cool Whip.
