Green Rice /restaurant style image

This recipe is from Mexican restaurant in Las Vegas at the Stations. This is so good I always get this in place of the white rice. Try it you will love it too!

Number Of Ingredients 11

1 1/2 cup(s) long grain rice
2 teaspoon(s) minced garlic from a jar
3 cup(s) vegetable broth
1 or 2 medium ripe haas avocados
1/4 cup(s) fresh lime juice
2 teaspoon(s) lime zest
1/2 to 1 cup(s) fresh cilantro leaves (or baby spinach leaves)
1/4 cup(s) olive oil
1 teaspoon(s) cayenne pepper, or to taste
1/4 cup(s) chopped white onion
- tequila or water- as needed

Steps:

  • Bring rice and vegetable broth to a boil. Reduce heat, cover and simmer for 20 minutes, until liquid is absorbed and rice is tender. Remove from heat let stand 5 minutes.
  • Combine in a blender the the avocado pieces, lime juice,lime zest and olive oil. Pulse a few times. Add cilantro and cayenne pepper if using. Blend until smooth, adding a little tequila as needed to make the mixture the consistency of dairy sour cream.
  • Stir the rice with a fork to fluff and add the chopped onions and garlic and dash of salt if desired. Stir avocado mixture into the rice and serve warm. If you like serve with a dollop of sour cream and sprinkle with chopped green onion tops.
