GREEN PEAS WITH CHEESE AND HERBS image

Number Of Ingredients 9

1 lb. frozen peas
2 Tablespoons red wine vinegar
1 tablespoon minced shallot
salt
pepper
3 tablespoons olive oil
2 teaspoons fresh mint, chopped
2 teaspoons fresh parsley, chopped
4 ounces cheese (ricotta salata, fontina or Swiss) cut into pea size cubes

Steps:

  • 1. Bring enough water to cover the peas to a boil, and salt. Add the peas and cook for 1 minute. 2. Drain in a colander, and immediately plunge into ice water to stop the cooking. Drain and set aside. 3. In a medium bowl whish together the vinegar, shallot, salt and pepper to taste. 3. Drizzle in olive oil while whisking. 4. Add the peas, herbs, and cheese. 5. Let sit for 20 minutes before serving.
