GREEN CHILE CHICKEN CHILI image

Number Of Ingredients 15

1 tablespoon olive oil
2 pounds boneless, skinless chicken thighs
1 large onion
2 6 oz cans diced green chiles
2 cloves garlic, minced
1 quart
1 can Pinto Beans
1 can white Navy Beans or Cannellini (white kidney)
1 teaspoon ground cumin or more to taste
about 1 tsp Lawry's garlic salt
Black pepper
Cayenne pepper
cornstarch to thicken
Chopped fresh cilantro and
Crushed tortilla chips for topping

Steps:

  • Trim fat etc from chicken thighs and then pulse in food processor. Heat oil and sautee chicken. Meanwhile pulse the onions in food processor then brown after chicken is done. Add & brown the garlic. Add 4 to 6 cups chicken broth. Rinse beans and add. Add seasonings to taste. Bring to a boil and stir consistently. Add cornstarch to water and thicken.
