GREEN BEAN SALAD WITH CORN, CHERRY TOMATOES & BASIL image

Number Of Ingredients 10

3 cups fresh corn kernals (3-4 ears)
Kosher salt
1 lb fresh green beans trimmed
1 small red onion cut into thin slices
1 clove garlic
1/4 cup red wine vinegar
1/2 cup olive oil
1 pint cherry tomatoes cut in half
1 cup roughly chopped fresh basil
pepper

Steps:

  • Boil a pot of water. Add the corn and blanch for 1 minute. Scoop out the corn and set aside. season the water with a generous amount of salt. add beans and cook until just tender about 3 minutes. Drain and cool. Meanwhile, put the onion in a small bowl with ice water this will mellow and crisp them. Using a mortar and pestle or flat side of knife, mash the garlic to a paste with a pinch of salt. Put the paste in small bown and whisk in the vinegar let sit for 5 to 10 mins. and whisk in olive oil. Combine just before serving.
