GREEK WHITE BEAN SOUP - MOLYVOS, NYC image

Number Of Ingredients 8

1 C dried giant lima beans
1 lg red onion, chopped
1 leek, whites only
2 C fat free, reduced sodium chicken broth
salt and pepper
2 C packed baby spinach
1/3 C feta cheese, crumbled
4 t extra virgin oil oil

Steps:

  • 1. Soak beans until wrinkled and split ove, 2-4 hrs. Drain 2. In a dutch oven, add beans, onion, leek, broth and simmer until soft, 1 hr. 3. Remove from heat and season with salt and pepper 4. Reserve 1/2 of the soup and using an immersion blender, puree remaining 1/2 . Combine. May be refrigerated at this point for 4 days. 5. To serve, reheat until almost boiling. Mix in the spinach and cook 3-4 min. 6. Plate and sprinkle with 1 T cheese and 1 t oil.
