Another old-fashioned favorite passed down over generations. Scratch cooking doesn't have to be a lot of work. This banana pudding is simple but creamy and just sweet enough. Play with the amount of bananas and graham cracker crumbs to your liking. Sometimes, I only use crumbs on the bottom of the pan and sprinkle more on the very top layer. Serve with or without whipped cream.

Steps:
- Combine flour, sugar and salt in sauce pan.
- Beat eggs and add milk. Add a small amount of the egg mixture to flour mixture in sauce pan. Once incorporated, add the rest and stir till smooth.
- Cook on medium heat until mixture thickens. Whisk to avoid lumps and make sure the bottom doesn't burn.
- Remove from stove. Whisk in butter and vanilla. Allow to cool for 5-10 minutes.
- Using an 8x8 brownie pan or casserole, create layers. 1) Cracker crumbs 2) Sliced bananas 3) Pudding 4) Cracker crumbs 5) Sliced bananas 6) Pudding 7) Cracker crumbs 8) Pudding 9) Cracker crumbs
- Refrigerate overnight or until set. NOTE: Banana slices will dry out and/or turn brown if placed on the top layer. They keep better in lower layers. Serve with whipped cream.
