GOOSE & WILD RICE SOUP image

Number Of Ingredients 13

6 strips bacon, cut into small pieces
2 cups goose breast, cubed
1 cup fresh mushrooms
1 1/2 cup chicken stock
1/2 cup chopped onion
1/2 cup chopped carrots
2 cloves garlic, minced
1 10.75 oz can cream of potato soup
2 cups half & half
1 cup wild rice (cooked)
shredded swiss cheese
minced parsley
cubed baked potatoes (optional)

Steps:

  • Cook bacon in large saucepan until crisp, remove bacon, leave grease. Cook 2 cups goose breast in bacon grease, set on paper towel. Cook mushrooms in same pan. In separate pot, add chicken stock, onions, carrots and garlic, cook until tender. Add cream of potato soup (and potatoes) and stir. Add half & half, bacon, goose, mushrooms and wild rice. Simmer for 45 minutes, remove from heat, and serve with shredded swiss cheese and minced parsley.
