Golden Potato Pancakes image

2 cups mashed potatoes
1 egg, beaten
6 saltine crackers, crushed
salt and pepper to taste
1 oil or bacon drippings for frying

Steps:

  • Mix together potatoes, egg and cracker crumbs; add salt and pepper to taste. Let stand for a few minutes. Heat oil or drippings in a skillet over medium heat; drop potato mixture by large spoonfuls into skillet. Cook until golden on one side; flip over and cook until golden on other side. Tip: Serve Golden Potato Pancakes with chunky-style applesauce that's warmed and sweetened with a little brown sugar. Add grilled sausages and a pot of hot tea for a breakfast that's comforting on the chilliest morning.
