GLAZED SHRIMP STIR-FRY image

1 box (5.6 oz) of couscous with toasted pine nuts
1 red pepper, seeded and sliced
1 al. large shrimp, peeled and deveined
1 jalapeno pepper, seeded and finely chopped
1/4 cup guava jelly
1/4 cup water

Steps:

  • Prepare couscous according to package directions. In hot greased skillet, cook pepper 3 minutes, sitrring frequently. Add shrimp and jalapeno pepper; cook 5 minutes. Add jelly and water, stirring until shrimp and vegetables are well coated. Spoon shrimp mixture over couscous.
